TIPS FOR CHOOSING COOKIE BAKING SHEETS

One of the questions people ask Chef Allyson is what type of cookie baking sheets they should be using. Good question! As you may have already guessed, not all baking sheets are created equal. When you walk the aisles of the store it can seem like a daunting task to determine which ones will help you do the job right, and which ones will make you wish you never baked. Having the right baking sheets will make a difference in how your cookies turn out. 

Here are a few tips to keep in mind when shopping for cookie baking sheets: 

  • For a more equal heat distribution, bypass the common cheap baking sheets. They also tend to warp. These are popular picks because they are so inexpensive, but they won’t produce the best cookies. Look for ones that are made from a heavier construction and offer an aluminum core.
  • Most cookie baking sheets come with edges all the way around, but if you find some without edges choose those. They make it easier to get a spatula under the cookies.
  • When it comes to using a sheet with a light or dark finish, that depends on your preference. Some people like a lighter sheet so they can see the cookie on it better, while others feel a darker finish will help the cookie brown faster.
  • If you are going to use parchment paper when you bake your cookies then you don’t need to invest the extra cash on nonstick pans. Having the nonstick pans on hand, however, is a nice option to have.
  • While it is not a necessity, it is nice if you can find baking sheets that have handles. This will help you get them in and out of the oven easier, without sticking your finger into the cookie.
  • Pay attention to the pan prep that is called for when baking your cookies. You may need to oil the pan, use foil or parchment paper, etc. This will make a difference when baking your cookies, so see what you need to do before putting the cookie dough on the pans. 

While there are no hard and fast rules regarding which baking sheets to buy for your cookies, you do want to bypass the cheapest ones you come across. They are in abundance at stores, but leave a lot to be desired. Invest in some better quality baking sheets and you will enjoy using them more and will most likely appreciate the way your cookies come out every time!
